Vinification: Grape variety by grape variety and cru by cru, cold settling, low-temperature alcoholic fermentation (< 13°c) in stainless-steel vats, ageing of still wines in barrels or foudres depending on the cuvée, ageing on laths for 3 to 4 years for non-vintage wines and 10 years for vintage wines

Each cuvée offers just the right balance between freshness and complexity. The care given to the vines and respect for the environment is no stranger to this. Le Clos Saint-Hilaire even has a draught horse and sheep roaming the rows of vines, promoting soil porosity and biodiversity. The typicity of the site is also fostered in the winery, where each vintage and each grape variety is vinified independently to allow the purest expression of the terroir to shine through.
This meticulous attention to detail at every stage results in the creation of champagnes rich in emotion and delicacy.
